Christmas Quesadillas – A great way to use up Christmas left overs to suit the tastes of your family.

Christmas Quesadillas

Ingredients:

2 Soft Tortillas

60g mature cheddar, grated or any left over cheese from Christmas

left over turkey or ham or beef or roast vegetables

1-2 large tbsp. basil pesto or cranberry sauce

Salsa and sour cream to serve, perhaps a little side salad 

 

Method:

Spread one tortilla with your pesto or sauce, sprinkle the cheese and add the turkey scattered on top.  Top with the second tortilla.  Try to mix flavours that are in harmony i.e. tomatoes and feta with pesto, Stilton and pear, caramelized onion and mature cheddar or Brie.

 

Conventional Cooking: 

Preheat a large pan on a medium heat on the hob, then place your prepared quesadilla and cook for 2-3 minutes on each side. 

 

AGA:

Place on the simmering plate on a piece of bake-o-glide and close the lid for 2 minutes.  Toast lightly then turn to cook for another 2-3 minutes.

 

Serving:

When cooked cut into wedges using a sharp knife or pizza cutter and serve with salsa, crème fresh and salad.
