Happy Easter Malteser Cake

Maltesers Cake

 

180g self raising flour

20g malted drink powder, (Ovaltine works well)

1 tsp baking powder

1 tsp bicarbonate soda

80g caster sugar

3 medium eggs

150 mls milk

150 mls sunflower oil

 

Frosting and decoration

75g butter, left to soften

150g icing sugar

30g coca

75g cream cheese or Nutella is Yum (if using Nutella omit the coca and use 180g icing sugar)

Maltesers and assorted chocolates of choice to decorate

 

 

Method:

 

Pre heat oven to 180C/Gas4 AGA grid shelf on last runner in Roasting oven or second runner in Baking Oven. Line or grease two 23cm, round cake rings.

 

Sieve all dry cake ingredients into a large bowl and place all wet cake ingredients into a large jug. Mix the wet into the dry with a whisk and gently whisk being careful not to over whip the air out of the mix.

 

Divide the mix into the two lined tins and place in the oven for 20 minutes checking after 12 to see if the tins require to be turned for even rising and browning.

 

To make the Frosting:

 

Cream the butter until completely soft then, add the icing sugar/coca mix gently with a wooden spoon or silicone spatula.  When this is completely combined add the cream cheese, folding carefully not over whipping.  If you whip too much the mixture will become too runny to use.

Spread half the mix between the two rounds and the remainder on top.  Decorate with lots of Maltesers and chocolates.    Enjoy!!!
