Gluten Free Oaty Bread

Ingredients:

425g (15 oz) oats (not jumbo or pin head)

1/4 tsp salt             

2 tsp baking soda or bicarbonate 

2 tbsp soft brown sugar

1 egg                                     )

500g (1lb 2oz) natural yoghurt   (one large yoghurt pot)       

 

Method: 

Pre-heat oven to 200c (Gas 5). Place the oats, salt, brown sugar and baking soda in a large mixing bowl.  Whisk the egg with the yoghurt to ensure there are no large pieces of egg, and then pour into the mixing bowl.  Mix all together and pour into a lined loaf tin. 

Bake at 200C/Gas 5 or Aga place in the Roasting oven, first or second runners. Bake for approx. 30 minutes, checking after 20 in case you need to turn the tin.  Check the loaf is cooked by inserting a skewer or knife through the middle, count to five and remove - it should come out dry.  If still a little wet return to the oven upside down, uncovered for a further 5-10 minutes. Yum and very healthy, what’s not to like!
