Chocolate Orange Muffins

Ingredients: 

 

150 mls sunflower oil 

200 g self-raising flour

2 tbsp coca powder

1 large tsp baking powder

140g golden caster sugar

1 tbsp orange marmalade

3 eggs

150  mls full-fat milk

1 tsp orange extract 

1 bag of small chocolate orange segments or your favourite chocolate

 

Method:

 

Fill a twelve-hole muffin tin with muffin cases. 

 

Into a large mixing bowl place all dry ingredients, sieving each to make sure there are no lumps.  Measure out all wet ingredients into a large pouring jug and give a whisk to ensure the eggs are well mixed.  Add the wet to the dry and give a quick mix until well combined.  

 

Pour out into the prepared muffin cases.  Place in the oven 180c or gas 4 for 12-15 minutes, checking half way through and adjusting the timing.

AGA: Baking Oven top runner,  (two oven AGA fourth runner Roasting Oven with cold shelf on the second runners) 

 

The tops will still be a little moist when cooked, remove and gently place a little chocolate orange segment into each muffin so that it just half popping out of the top.  The heat of the warm muffin will melt the underside of the chocolate attaching it to the muffin  – delicious and very tempting.
