French Toast - With Cinnamon Butter Bananas
French Toast With Cinnamon Butter Bananas (Serves 2-4 depending on how hungry you are)
Ingredients:
4 slices of bread (your choice)
3 eggs
3 tbsp milk or cream
pinch of sea salt and freshly ground black pepper or 1 tsp icing sugar, if sweet
1 tsp vanilla extract (optional) can add cinnamon or flavour of your choice
small knob of butter
Method:
Using a wide shallow dish, beat the eggs with the milk adding the icing sugar and vanilla, if using. Dip each slice of bread into the eggy mixture ensuring each slice is fully soaked before taking out.
Preheat a pan while the bread is soaking. Once soaked place a knob of butter into the hot pan, melt and then quickly place the soaked bread on top. Cook for approximately 2-3 minutes then turn. If you are making French Toast for larger numbers or making in the AGA simply use a large roasting tray and place in a very hot oven, checking after 5 minutes then turn for another 5. Serve with any topping of your choice, I have lots of favourites, at the moment its cinnamon butter bananas but bacon and maple syrup, or compote and simply dust with icing sugar or Greek yoghurt, is delicious!
Cinnamon Butter Bananas
Ingredients:
1 small ripe/over ripe banana per person or half large
25g butter
1/2 tsp ground cinnamon
Method:
Heat a large pan, while heating thickly slice the bananas at an angle. When the pan is hot add the butter and while melting sprinkle over the cinnamon and gently swirl at little, then add the bananas. Don’t be tempted to stir as the bananas will break, simply cook 2-3 minutes one side then flip once, maybe twice, to coat each side in the cinnamon butter.
Enjoy on top of French Greek yoghurt either way its delicious, great for using up over ripe bananas and is a great brunch.
