Feta, Beetroot and Pink Pickled Onion Salad 

 

Ingredients:

100g bag rocket/little gem or mixed green salad leaves of your choice

250g (9oz) pack ready-cooked beetroot 

1 small cucumber, cut into cubes

100g feta, cut into cubes 

Dressing:

1 small red onion, thinly sliced

3 tbsp sherry vinegar

4 tbsp extra virgin olive oil

Pinch of sugar, pinch of salt, to taste 

Method:

In a small bowl, mix together the onion, vinegar, sugar and a pinch of salt.  Leave to pickle at the side of your cooker while you dice the beetroot and feta.

Scatter the salad leaves on a large white platter and sprinkle over the beetroot, then the cucumber finishing with the feta.  Top with a cluster of the pickled onions (drained, retaining the liquid).

Use the retained pickling liquid to now make the dressing by mixing with the olive oil and use to drizzle all over the salad. This is a very colourful salad packed with flavour and great for sharing.
