Za’tar Chicken Skewers with Lemon and Parsley Dressing
Ingredients:
4 chicken fillets, each sliced into 3 or 4 strips
1 tbsp za’tar seasoning (available in spice section of most supermarkets)
Sea salt and freshly ground black pepper
1-2 tbsp freshly chopped lemon thyme/parsley (or dried)
1-2 tbsp olive oil
Garlic, chopped (optional)
Dressing:
250ml natural yoghurt
2 tbsp fresh parsley chopped
1 lemon, zested and juiced
Sea salt and freshly ground black pepper
Method:
First if using wooden skewers remember to soak in some boiling water at least 1 hour before using.
Mix the Za’Tar, thyme, parsley, garlic, salt and pepper in a wide bowl. Now coat each fillet on each side with the mixture and place in a bowl in the fridge to marinate. (Remember to lift out an hour prior to cooking to bring to room temperature.)
To cook:thread each little strip of chicken onto a wooden skewer place on the BBQ and cook for 3-4 minutes each side. OR middle of a preheated oven 180 C fan/200C/Gas 6 or AGA on the floor of the Roasting Oven and cook for 7 minutes each side or until brown but not burnt, the chicken should be very moist.
To make the dressing;
Mix the yoghurt, parsley, lemon zest and juice together and add the salt and pepper to taste. Serve drizzled over the cooked chicken or in a separate sauceboat. You might find you need to make more, as it is very addictive!
