Chocolate Minties 

 

Ingredients:

 

175g butter

2 tbsp golden syrup

250g dark chocolate, broken into pieces

1 capful peppermint extract

300g rich tea or digestive or a mixture broken into a rubble

100g bar mint aero or equivalent, broken into rubble with some larger pieces

 

Method:

 

Place the butter, golden syrup and chocolate in a saucepan and heat gently on the hob until melted.   Remove from the heat and add the peppermint essence and stir well.

 

Empty the broken biscuits into a large bowl pour over the melted mixture and stir until combined.  Now add half of the aero rubble and mix gently.  

 

Pour mixture out into a 23 cm square cake tin and level with a spoon.   Sprinkle oven the remaining aero rubble and gently push down.  When cool, chill in the fridge, then cut into squares. Delicious with a cup of coffee.

 

 

AGA:  Place the butter, golden syrup and chocolate in a large heatproof jug at the back of the AGA until melted.  Now add the peppermint essence.
